The most common department in charge of weight & measures at the state level is the State Agriculture Department, that is especially true in smaller, more rural states. Other states place it within a Consumer Affairs related department, and some states run a stand-alone Weights & Measures Department.

If you cant find the information you need you can always contact your local county government. In most cases, that's where the actual "regulating" takes place anyway.
